Recipe Crunch

The texture of raw, crunchy fruits and vegetables help to cleanse the mouth and remove plaque and debris from the teeth.

Crunchy foods usually contain lots of water and which hydrates your mouth. These foods also require a lot of chewing and helps to produce more saliva. Saliva protects the teeth from the acid that plaque bacteria produce.

Veg Bowl with Peanut Sauce

*Serves 4 and contains peanuts

Ingredients:

  • 4 eggs
  • 4 cups cooked brown rice
  • 2 cups napa cabbage
  • 1/3 cup mint leaves
  • 1 cup cilantro
  • 1 cup bean sprouts
  • 1 cup capsicum
  • 1 celery stalk
  • 1 garlic clove
  • 1 cucumber
  • 3 scallions
  • 2 red chillis
  • 3/2 cup coconut milk
  • 1/3 cup peanuts
  • 2 tsp fish sauce
  • 2 tbs soy sauce
  • 2 tbs brown sugar
  • 2 tbs lime juice
  • 1 cup peanut butter
  • Salt

Method:

  1. Boil eggs (yolks should be medium- hard).
  2. Toss cabbage, scallions, celery, cucumber, sprouts, mint, cilantro and peanuts in a large bowl. Season with salt.
  3. To make the sauce: pulse chillis, garlic, peanut butter, coconut milk, brown sugar, lime juice, soy sauce and fish sauce in a blender until smooth. Transfer to a saucepan, add a bit of water and heat on medium until heated through.
  4. Serve vegetables with cooked brown rice and dress with the sauce.

Summer Rolls

Ingredients:

  • A pack of rice paper rolls
  • ½ cucumber cut into strips
  • 1 shredded carrot
  • 1 cup shredded red cabbage
  • 1 avocado
  • 1 bunch of mint
  • 1 bunch of basil

Dipping Sauce

  • ½ cup crunchy peanut butter
  • 2 tbs lime juice
  • 1 clove of garlic
  • 2 tbs soy sauce
  • 1 tbs hoisin sauce
  • 1 tbs maple syrup
  • ½ tsp ginger
  • ½ tsp crushed chillis

Method:

  1. Place veggies and herbs horizontally on the bottom 1/3 of the rice paper wrapper. Do not overfill or it will be difficult to roll.
  2. Fold the sides of the wrapper over the edges of the filling and then roll from the bottom to the top of the wrapper, very tightly, forming a summer roll. Cut in half for presentation.
  3. For the dipping sauce, whisk all ingredients together. Add a little water for desired consistency.
